Unfortunately, the only way to delete them is through iTunes. If she has an iPad 2 and took pics with it, those can be deleted. What she needs to do is sync it with iTunes, unselect the option to sync photos, and sync it again. This will delete the library.

Apple's WWDC starts tomorrow and iOS 5 will be intro'd. Lots of speculation as to what it entails, but most are pretty confident that one of the things coming is much less reliance on iTunes/syncing directly with a computer.

I've never tried this - but one option may be for you to log out of your iTunes account on your computer, have her log in, and try syncing the iPad again. Once iTunes "sees" that her iPad is connected to iTunes running under her log-in, it may allow her to get rid of the pics.
