| Turns out I have an older system (go figure duh) and my pressure gauge is only a measure of shaft turning resistance. I did successfully get my hydraulic oil pretty warm from running the flow rate too high and I have it turned down a lot now. Of course now I have to make sure I have enough flow to deal with speeding up after turning - seems like a fine line between ok and stall especially since I'm trying to run as little oil flow as possible (too much means the tractor bypass valve gets noisy).
