You can't rewrite over a DVD-R disc. Depending on the exact capabilities of the recording and playing devices, you may be able to add files until the disc is full, but not the best plan, especially if others are going to try to play it in their dvd players.
DVD-RW discs are ReWriteable and will do as you want. Your device may or may not be capable of recording to this format- check out the specs or buy 1 and try it.
