IL. | ok was reading post below about deer sauage was going to ask this there but didn't want to hi jack Indy's post, so here goes ,what procedure do you folks use to smoke your sauage. what type wood, how much time, what type smoker, any thing I need to have or do. Want to get back into making my own sauage but don't have anyone to smoke it for me anymore,( the old boy that use to do it for me passed on) and he took the "trick" of smoking with him, I always asked how to do it but he pertected it better than his sauage receipt.
