We use butternut squash in pie in place of pumpkin. We rarely eat pumpkin pie now on squash. We peel cut up and cook donw then use in place of pumpkin in the pie filling. I have also put it peeled and in chicnks in the freezer and then use in recipes where it is going to be cooked.
