Once you have it downloaded and installed go to any .pdf file you have on your computer and highlight that file with 1 click.
After that file is highlighted go to the menu bar and choose File> drop down and choose Get Info.
You'll now have the Info window pop up and you should see file type, hopefully it's adobe pdf like you think.
Choose the application that you want to open PDF files from the Open With menu, in this case Adobe Reader.
Now choose change all. This will make every pdf file on your mac open with the default application "adobe reader".
This is the same method you would use to change the default application for any file type.
