If I were building a new barn, I'd sleeve everything. If using 1.25" pipe, I'd bury 2" and slide the 1.25" inside of it. Avoid any and all couplers and elbows below ground. That way, any individual line can be pulled out and replaced.

Personally, I'd use black poly pipe because that's what I'm acquainted with. Pex is probably better, but you'd need to keep crimpers on hand for repairs.
