Not steelhead, but rainbow we just grilled with the skin on and then peeled it afterwards. We seasoned the skin with olive oil and some kind of season all. We were on vacation so made due with what the cabin had in the cabinet. Made fish tacos so hard to mess up. Fish is hard for me to season like restaurants. Let me know how you decide to do it and how it turns out.
