I think what you're asking is what is the nutrient removal that's occurring. Alfalfa takes a lot of calcium, sulfur, potash, and phosphate. Your Ag Extension professional has some information on this & it's available on line. When looking at your dry matter calculations, I'm amazed at what the photosynthesis process can do.
