We also have vaulted ceilings, but they are pitched less than the roof so there is still room for insulation, lights, etc between the roof and the ceiling. We have a floor to ceiling window wall on one end of the room, which is really nice for letting light in. I'm not sure about "homey" but our setup does make the house seem bigger and brighter.
