Are you worried about your Dell and it's data being compromised? If not your solution would work just fine. If the grandkids computer connects will be connected to the internet, I would make sure to have a virus scanner installed and possibly parental controls of some sort, kids can get to anything these days with the internet as it is.

If you are worried about your data being compromised the best thing is to purchase a new harddrive for the Dell and install the OS again. Even though data is deleted, it's still on the computer, it is never removed and with enough time all your data could be recreated. The only way to make sure your data is gone is to completely destroy the hard drive, magnet, then break into pieces and discard so somebody can't gather the pieces and put it back together.
