Can't speak to the north rim, but when going to the south rim, pull farmers hours and get there early. You'll avoid the big crowds.
This has happened to us several times, once in San Francisco on Lombard Street, we were the only ones there, stopped and took pictures. Happened again at Arches in Moab last summer, got there at daybreak, second car there. When we left after the 7 mile hike you couldn't find a parking spot.
