Take your time. Cook it low and slow.

I like to make several shallow slashes in the top, and cover with a generous amount of salt plus ONE other flavor. Sometimes onion, garlic, black pepper, maple syrup, or whatever you feel like.

Preheat oven to 400, turn it down to 200 when you put the roast in and let it run for 4 hours or so. I like to see 140 for an internal temperature
