When she was catering my wife would place the whole loin in a 4" deep steam table pan, liberaly appli "Accent" over the meat, then fill pan approximately 3/4 full of water and bake in a convection oven till meat was approx 140° in the middle. Slice when done, usually got 40 -45 slices per loin.
