We rub ours with a combination of equal parts salt, pepper , and sugar, work it in very well. Then brown in a cast iron skillet ( all sides and ends ) . The sugar in the rub gives it a nice tan color when browning . Put in a glass roasting dish, cover with aluninum foil and bake till internal temp is about 150-160. let rest covered 10-15 minutes before slicing . We use the bonelees loins
