1950 Betty Crocker's picture cook book
Conventional 325*
12-15 lbs 16-17 minutes per lb.
10-12 lbs. 18 minutes per lb.
Under 10 lbs. 20 minutes per lb.
Half Hams 22 minutes per lb.

Internal temperature 150*

No help on convection oven other than I remember vaguely drop temp. down 25* and cook as normal.

Edit: place fat side up, preheat oven, do not add water, do not cover, do not baste.
Rereading your post with the double wrapped al. foil, it may call for the extra time, but it sure seams like alot.
