Toss the cut in the fridge and use within a week.

Agree week to be safe. But let's be honest if cut at a reputable shop and fridge is right temp I can't imagine beef turning much for 14 days. But never lasts that long here anyhow.
Man this reminds me of some stories of things people would eat and how good we have it these days.
