Subject: The return of fried cheese

coast of Maine
Started to use well melted mozzarella (towards crisp on bottom)crab meat sprinkled on top ,chimichuri (from a previous posters recipe) or tonight we used chopped avocados with the crab, it takes a bit to get used to as far as sticking but it is great when you find that touch,sort of like a gooey fajita,you can divide in the pan before folding it over,just amazing flavors and simple ingredients,we use some paprika on crab,I think you could do the same with any precooked meat,I mean even after is gone cool to cold it has great flavors
