Canmore Ab. Canada | I keep it in the refrigerator foe a week or two between uses. When I'm going to bake I pull it out and refresh it a couple times about 12 hours apart to freshen it up.
Then I figure out how much I need and make that much plus a little extra which I feed and return to the refrigerator.
Is there supposed to be that much water?
Yes in that recipe it makes two 1000g loaves. I use 75% hydration so that means 750g water in 1000g flour.
