Canmore Ab. Canada | If you refresh the starter a couple times before you use it, it should be alright. (Refresh means to discard maybe 3/4 and add new flour and water)
Starter that has sat in the fridge too long will go acidic. It should smell more like... apple cider vinegar maybe.
A good starter will float if it has good activity to leaven.
Most of the time I use a small amount of commercial yeast to enhance the rise.
