Here we have a dish most Mainers know as New England Boiled Dinner.Its corned beef ,cabbage,potatoes,carrots and can be ,parsnips,rutabagas,onions,,beets cooked separately.(cook the corned beef an hour or so first)Chuck it all in a pot ,pickling spice ,put on the back of the wood stove.Have tried the Instapot last week and it was the best and quick,cornbeef chunk was 70 minutes,then add veggies cooked for 7 minutes on high pressure...was the best weve ever had,must be the pressure cook tenderizing the beef and infusing the spices into the veggies.Most country diners around offer New England Boiled Dinner ,,some once a week as its popular.If you cook beets separate some mash it together with all the left over and call it Red Flannel Hash,,my oldest friend loves this hash,,Me not..hehe
