What I saw a few years ago is that if you're young and have a farm to pay for, and want cattle, you need to milk them. Beef cattle are a retired man's game. There's a million ways to lose money milking cows, too. The risk, reward, and work levels are all higher together, which means dairy is for young men and beef is for retired dairy farmers who have the farm paid off.
