Petersburg, Illinois | Maple syrup was a project we did with our kids as they were in FFA and 4H. We made 75-100 gallons a year. Being from Illinois, we aren't exactly in the syrup belt, but we had fun.
I agree with others that finishing by eyeballing was easy with a little experience. You should never have to stir. If you do have to stir, you went too far. I found a syrup hydrometer was much better than the temperature method also.
My son did win Speacialty grower awards in FFA and won the National Demonstration contest in 4H.
We haven't made syrup for 20 years. Still have all the equipment.
