Mix it in when the next one is beginning to thicken quite a bit.
Now another option is to make maple sugar out of the thick syrup or whip it into some butter to make maple butter.
And when we get it a little too thick it will precipitate out on the bottom of the sealers.
Shame to lose the sugar

BTW a candy thermometer with a clip on it can be held over the fire on another tool like a long spatula or something similar clipped to the handle and that keeps your hand away from the hot steam.
Every day you have to adjust the thermometer because of changing atmosphere pressure with a boiling pot of water
Check how it drips off a spoon and you will get a good idea of how thick it is after a few boils. | |
