Either they buy a quarter or a half. If you are legal to sell individual cuts then I guess you can do that too if you want to but.....you get too many "I only want steak people", now you are stuck with a whole mess load of burger and roasts. Or charge them an a-holes price on the steaks, but explain to them if they buy the whole quarter, it comes out to being so much cheaper per pound and they are basically getting the steaks for free. So in a few months they are out of steak and they want to buy some from you again....your freezer is almost full of burger and roasts yet....do you get an animal butchered just to sell a few steaks and then sit on the rest of the burger, for how long?
