What I've learned is if you over water early, you are guaranteed to HAVE to water more frequently later.

What exactly do you mean by that statement? The corn plant 'expects' the water?

When you over water early the root system will not develop as deep as if it were drier and chasing after deeper moisture. This creates a shallower water holding profile of soil in which the roots will draw water from. So later in season when et is the greatest you have to refill that shallower profile more frequently than if the roots were deeper.
