Mozzarella is quite quick and easy. Normal pots for stove, good thermometer, and will likely need to buy rennet. So cost under $10 for multiple batches.

Cottage cheese and ricotta can be easier iirc. Farmer cheese is quick. Cheddar, parmesan, and hard cheeses are more complex.

It's fun and cheaper than many things.

Eta. Yogurt can be the easiest and biggest cost savings if that is your objective.
