This was a steer born June 1, 2019 and harvested some time in August of 2020. I usually start processing my oldest (calved near May 1) and largest steer the following 2nd or 3rd week in April so they can hang for about 2 weeks and be ready for the Farmers Market start in early May. Then take one or two in every other week through the summer. The steaks all look about the same. Stacking high marbling bulls on retained high marbling heifers makes this work.
