My experience is that good straw comes from windowing grains early when the the top leaf is drying off( grain is then done and ripe)and the straw is still green and strong.The windrow dries out in short order and the straw is nice. if you wait untill you can straight combine it, the straw is already overripe too much to make good straw and just shatters to dust..
I have witnessed some of the threshing shows are waiting untill the wheat is totally ripe to go and binder the bundles for the show.Its the same rotten straw situation. The bundles are brittle and are really CRAPPY looking loose grain bundles.(:
