Pittsburg, Kansas | As far as weight, what really packs it on is the combination of fat and carbs. Active people can eat a high carb low fat diet and not gain too much weight. A person needs to get enough fat for the fat soluble vitamins, but most poor countries that consume a lot of carbs like rice usually have very little animal fat to go along with it. They don't gain that much weight from the carbs because they don't have the additive effect of the fat. The exception is when cheap vegetable oils enter the picture. Then you will see populations that traditionally did not get fat eating a high carb diet suddenly putting on weight. Carbs and protein is not terribly fattening and fat and protein (low carb) is not fattening.
But get all three together and pack on the pounds. The reason is the carbs raise the insulin (promoting fat storage) then the fats just add on top of the carbs. If eating fat without the carbs insulin stays low and the body is not inclined to store fat. So ideally if a person has to eat carbs and fats and is concerned with weight gain, best to do it in different meals.
American diets are loaded with both fats and carbs. Nearly every processed food has both.
