Really depends what you both enjoy. For us we are likely to take part of the day off and go to a local ski hill. Your trips have been interesting too, and we've done things like that - although not specifically for Valentine's Day. And I bet there's plenty of guys that ignore the day - we kinda do but that's a mutual thing.
