Some of the newer varieties have a few more 3 nuts per pod due to the varieties in their breeding line. The bad taste can be several things like inmature nut, slight freezing can bitter them also but the electric eyes is the cleaning process are supposed to take most of them out. I grow spanish and runner varieties but my favorite to eat is spanish. Seems like they have more oil in the nut.
