Subject: RE: Hillbilly Sous vide question

N.W. Illinois
A better way to sous vide on the cheap is with a beer cooler.

Go to YouTube and search "how to sous vide with a beer cooler." Food Lab even has a beer cooler sois vide video on there.

Zip lock bags work great. Fold the zip lock back so the meat doesn't come in contact with the zip lock when you put the meat in. Put the zip lock bag and meat in the water and remove the air before sealing. You don't want air in the bag. Of course no water either.

Stack and space the meat vertically when you sois vide. More even cooking doing this.

Temps and time vary for different meat and your tastes. You can sois vide a steak in 1 hour at 130 degrees.

You can sois vide meat, put it in your fridge and grill it days later.

Do not overcook when grilling, you just want to sear it. A few minutes per side.
