Subject: Scottish eggs

Wife made some Scottish eggs she called them.

Basically a soft boiled or hard boiled egg wrapped in a 3/8 to 1/2" thick mixture of breakfast sausage, then fried in an Instant Pot with air fryer hood. Air fried puts a nice light crust on them. The meat mixture consists of breakfast sausage (spicy or regular), an egg, some shredded cheddar cheese and crushed up pork rinds. Don't ask me the quantities, she just kind of wings it.

A couple of them makes a really good keto friendly lunch. Think we are going to start taking them for our lunch out in the desert on our desert rides.

The same meat mixture can be just made into meat balls and air fried also. She added a little creme cheese to them besides the other ingredients. We had some of those for supper one night. I think they are great.
