Pittsburg, Kansas | I think a lot of people would do very well on the diet you describe. 100 grams carbs a day would allow for quite a few normal foods and eating without going full keto.
Those of us who are diabetic have to go lower in carbs if we want to stay off diabetic medicines. Many people do not need to go that low unless they just have a lot of weight they want to lose .
Then there is the addiction factor also. For me it is easier to completely cut some foods out rather than try to restrict quantity.
