No expert but the last few years that I cut my own deer I had a hanging cooler so I could keep a constant temp. I hung the whole deer, with the hide on, for about 4-6 weeks. A good mold on the inner cavity was the indicator. The hide comes off quite a bit harder but much less waste. Very tender meat and not gamey tasting.
