I've never seen whole melon like that pickled in a crock. Do you slit of puncture them at all so the brine gets in?
.. I don't pickle anything my self but might attempt it yet in my remaining lifetime. Wife doesn't care for pickled watermelon but I have a couple of favorite people that I get some from at times.They are in jars but do have quite a bit of red delicious melon part on them... YUMMY! I developed a love for pickled watermelon when my grandmother used to make them but she has been gone for near 40 years..
