Type of hay and cutting # and even the variety of alfalfa or grass makes a difference. As Carlson mentioned, some kinds of grass hay really cut hard and it’s so fluffy that your knives never get a chance to slice against. Disk mowers cutting grass hay short also caused us increases in processing time. Not sure if it is dirt or just such lignified lower stems that caused that? Olivetroad’s suggestion of running water might help you cut processing time. Some tubs can withstand the extra strain of additional knives and some can’t.
