Ah, yes, brings back memories. The story my dad told was that the codfish were hung on the fences to dry, so the quality of the lutefisk was dependent on the health of the dogs in the area.

I moved to the Bay Area in California in the 60s. I would go over the hills - they called them mountains - and rent a small motor boat. I would catch ling cod. Once I left a piece in the fridge for too long and it went bad. I immediately recognized the smell - lutefisk! Everything made sense right at that moment - rotten codfish.

I do miss lefse at Christmas.
