Another way to try cooking a roast is to put it in a covered pot in the oven frozen. Cook it about ten hours or so at 190 degrees. I'm guessing that the roast slowly thaws and this is what keeps it at the right temperature long enough for the tenderizing process to take place. It is amazingly good done this way - and very easy to do.
