If you are already reasonably experienced with video editing and photography working with RAW files consider the Mavic 2 Pro To get the best from the video with it you need a computer able to deal with H.265 10 bit output from it. If that's an issue or you are more intermediate at this point the Air2 might be the best choice it's quite a bit cheaper but still produces very nice video and stills. With the Air2 you have less manual control of the camera, but with the Pro2 you can still leave it pretty much on Auto and get great result.
The flying experience is not that different between all of them, the Mini has fewer automated modes (which are quite useful to get smooth movements) and is slightly less capable in strong winds, shorter battery life too.
For the great majority of users these current foldable models are the way to go, they are just so much more portable and lightweight plus less intimidating (and noisy) in use.
