I can't image what causes the soup to be sour or sweet. Unless the ham has or had a problem.
I always used a smoked ham hock to flavor bean soup. Dice up an onion, a couple carrots, and a stalk or two of celery and some chopped garlic and cook them in a little oil or butter for a 5 to 10 minutes and then add a pound of beans and enough broth or water to cover the beans well and bring to it a boil and then simmer until the beans are done. Then take out the ham hock and get rid of the skin, bone and gristle and dice of the good meat and put it back into the soup. It is best if you soak the beans in some salted water overnight, but you don't have to soak them.
