I should add the diet clearly does work. The original diet often reversed diabetes, reversed heart disease and so on, basically pick something linked to metabolic syndrome and things improved.

And often benefits lasted for years after people quit the diet.

I think of it much like hitting a reset button.

The detrimental effects of rising insulin resistance take years to build.

Rice diet is said to take two months to adapt to it.

If you get back to insulin sensitivity along with significant weight loss, you likely have moved many of the results of metabolic syndrome years to decades down the road.

Very low carb diets take a different pathway. Basically lowering insulin by not raising it.

Some people stay on rice diets for years, but I think their metabolism would be slowed, I haven’t looked for directly on point research on that but I believe it exists.
