NW OH | We use a saw to cut the neck and head off deer every year. Usually hang them with legs up head down , no issues here so far. After we remove the hide we pull the loins out using our fingers to separate from the spinal column, no knife involved there. Not sure why the rib bones would be cut with a saw? Rib meat here is cut out from between rib bones with a knife and ground. Don’t see a issue with the neck, ribs I would avoid. Just my two cents worth, good luck. | |
