Spend some more time reading but learn about building Ubiquiti AirMax PtP bridges between your buildings and using Ubiquiti Unifi Mesh APs for your access points.  There is no need to tear up your yard and bury fiber.  Sure, it sounds cool but if you use newer AirMax products you will be faster than you'll need.  Go to their forums at community.ui.com for more info.  If you lived closer I'd bid the job and do it for you.
