I make 2 or so gallons every 4 years or so. I dig it. Put in egg buckets. Wash with a pressure washer in the egg buckets. No need to peel it this way.

Grind it with a food processor with a dab of vinegar and sugar. Put in small jars and freeze it. I use wax paper to seal the lids. It will last 3 to 4 years in a freezer doing it this way.
