A guy I know used to have a delivery route and would sell it in 50lb boxes, x lbs of burger x lbs of steaks x lbs of roasts x lbs of soup bones etc etc
Then just figure a price per box that works for you it will make the burger look expensive but the steaks look cheap and no complaining because they got 50 lbs meat for x amount of $$.
Downside is YOU have to have a lot of freezer space to hold meat YOU have to sort it in 50lb boxes.
Upside is you will probably have more customers as they will not need as much freezer space and will only have to buy 50 lbs at a time instead of half or whole beef.
Also need to be done at a federaly inspected plant to sell like this.
