Dr Paul Mason describes why the pain is reduced when carbohydrates are reduced in the diet. It has to do with fatty liver and a chemical that the fatty liver over produces that destroys our cartilage. The explanation starts at around minute 35. Get rid of the fatty liver, get rid of the cartilage problem, and the pain goes away.
