aka, pork upper shoulder. HyVee had them on sale for 98 cents a lb.
Tried something new today. Wrapped it in double foil the last half of the cook with a little apple cider in the foil.
Took it off at 200 f. saved the broth from the foil and put back on for a few minutes with an apple vinegar apricot jam glaze.
After pulling, poured the saved broth on. Super tasty and juicy.
Wrapping eliminated the stall and knocked two or more hours off the cook time. Six hours flat at 275.
