Yes even fiber and fat will delay the glucose spike or flatten the spike.

I'm more interested in just keeping it low and utilizing increased fat for energy and less glucose. I'm normally in a low state of ketosis. Usually .2-.5mm range. Higher if I fast longer.

Metabolically healthy people can eat a lot of carbohydrates and do ok. The best bang for the buck for people that are insulin resistant like myself is just to not eat the foods that raise insulin and glucose to begin with. If it doesn't go in the mouth, it can't raise the blood sugar.
